Allergy Awareness Training for Caterers, Chefs and anyone else who plans menus
It’s vitally important for all caterers to be aware about food allergy and to take it seriously. This is because when someone eats a food they are allergic to, even the tiniest amount, this can cause a very severe reaction called anaphylaxis
In the UK about ten people die every year from an allergic reaction to food and many more end up in hospital. In most cases, the food that causes the reaction is from a caterer such as a restaurant or takeaway. So if someone with a food allergy asks you whether a dish contains a certain food, you should never guess the answer.
Every member of staff needs some understanding of food allergy and its possible consequences. Staff who have contact with customers should be particularly well briefed in encouraging them to mention any food avoidance needs and discussing any allergies or intolerances with them – ideally you should have one person designated per shift to answer allergy enquiries who will be able to check ingredients or cooking methods and suggest safe alternatives
